Cheese In Wine: Lagrein From Italy Combines The Best Of Both
There’s a cheese that Italy makes called Lagrein and there’s a red wine by the same name as well. The cheese is steeped in the wine for five days with seasoning like pepper and garlic and then matured. The cheese seems to have caught the fancy of cheese enthusiasts in the Bay Area and the cheese is often served with the wine of the same name.
In Italy, this cheese is made by a dairy co-operative that consists of around 4000 farmers, each with around nine cows. Small farms but they come together with a team spirit to produce cheese for international markets.
