Chr. Hansen Introduces New-Gen Mozzarella Cultures

The new freeze-dried Mozzarella cheese cultures from dairy ingredients giant Chr. Hansen have been optimized in order to make production more cost efficient. They are targeting this mainly to South European and South American Mozzarella cheese producers and are quite confident that this culture will offer protection against bacteriophages and will be a convenient way for dairies to switch from bulkstarter cultures to DVS.

The cost efficiency comes from the fact that the strains have strong anti-bacteriophage properties and thanks to three variants, the dairy can rotate the culture which makes it less likely for a phage attack. The variants are: FD-DVS STI-12, FD-DVS STI-13 and FD-DVS STI-14. The cultures are also available in varying size packs to suit each dairy’s need.
