Chr. Hansen’s Fresco Cultures Take Cottage Cheese Into The DVS Zone

Though DVS cultures or direct vat set cultures were in use some years ago, many cottage cheese manufacturers switched to bulk starter cultures because they were more economical to use. Well, Chr. Hansen’s Fresco cultures for cottage cheese has seen the industry on the road back to DVS technology. The culture is supplied in a frozen or a freeze-dried state and because it is not propagated, there is less chance of contamination or off flavors and it is resistant to bacteriophage.

The US cottage cheese makers are all shifting and most often, a bag of frozen culture is supplied and it just needs to be emptied into the vat. This trend is seen to be growing to other parts of the world as well.
