New cheese enzyme from Chr Hansen and Novozymes
The two giants in dairy ingredients have come together with a revolutionary new enzyme that promises to raise the yields of mozzarella cheese. The enzyme has been in their R&D testing labs for a while now and it is hoped that the yields go up by 2%, which would mean a huge amount I terms of volumes.
With the technical expertise of these two, it was only to be expected that they would put their heads together and come out with revolutionary products and they have not disappointed. The new enzyme is called YieldMax and it looks like the beginning of great new products between this new alliance.
