That’s what the new Choozit Eyes cheese cultures promise cheese makers. Till now, there was always a slight element of doubt when it came to the cheeses with eyes. There would sometimes be too much gas or too little gas and this would affect the eyes that the cheeses were supposed to have. Now this new culture promises perfect eyes every time.
The spokesman for the company, Danisco said that the cultures were available in a freeze-dried as well as a frozen form. What this culture would do is help cheese makers get a better looking product out on a consistent basis.
