Special Cultures From Chr. Hansen For Twarog
Around 5% of global cheese production comprises of Twarog, an Eastern European soft cheese that is used mainly to make confectionery and cakes. A lot of this cheese is made using bulk starter cultures which happens to be the traditional away. Now, Danish dairy ingredients giant Chr. Hansen has introduced a range of special cultures especially for Twarog production. These are DVS or Direct Vat Set cultures which can be added directly to the milk.
What benefits do these cultures offer? The main benefit is that it poses a lesser risk where phage is concerned. It also reduces waste. When the cheese is made with DVS cultures, it isn’t as crumbly so it minimizes the small pieces being washed away with the whey.
